Fibrex is a pure sugar beet fibre ingredient with tremendous thermo-stable water holding capacity (WHC).  This allows extra water to be added to bread products, for example, reducing staling and improving the eating experience.  

Add 0.5-2.0% Fibrex (on flour weight) and add an additional 3-3.5g extra water/g Fibrex.
